Nut Roast

This is one of my all time favourite recipes and mine and Kaiya's favourite roast dinner

100g Wholemeal bread (about 4 slices)
1 small Onion chopped (I use frozen so I don't have to chop them)
225g Mixed nuts 
1/2 pint Vegetable stock + 1 Tbs for frying the onions
2 tsp Yeast extract
1tsp Mixed Herbs
a pinch of Salt and Pepper

Grease a loaf tin with a little coconut oil and turn on the oven to preheat at 180.
Grind the nuts in a food processor and place in a bowl
Grind the bread into breadcrumbs in the food processor - place some of the breadcrumbs into a separate bowl and set aside - mix the rest with the nuts.
Place 1 Tbs of Vegetable Stock in to your pan (I use a large wok) then add the onions, cook until transparent.
Heat the remaining vegetable stock and add the yeast extract until it melts and mix well.
Then in the pan combine all the ingredients together and mix well - the mixture will be fairly slack.
Turn the mixture out into the greased loaf tin and sprinkle with the breadcrumbs you set aside earlier.
Bake for 30 minutes.

This tastes yummy and at Christmas I make it in advance, leave it to cool, wrap in cling film and tin foil and pop it in the freezer, one less thing to do on Christmas day ! take it out the freezer the night before, remove the clingfilm, cover the tin with tin foil and pop it into the over for 5-10 minutes and it's delicious.
